Our coffee starts with fresh, ripe red coffee cherries, hand-picked by local farmers. The cherries are then pulped by the farmers, leaving the beans covered with natural mucilage. The beans are washed and sometimes soaked overnight to remove the remaining mucilage, then washed again and dried under the sun. After drying, the coffee is known as parchment coffee or “gabah.” Bahtera Prime Trade then processes the parchment through hulling, cleaning, sorting, and grading to produce high-quality green coffee beans, ready for export.
