Coffee Processing: From Harvest to Dried Coffee Beans

The processing time from coffee harvesting to fully dried beans with an ideal moisture content of 11–12% generally takes around 7 to 30 days. The duration depends on the post-harvest processing method and weather conditions during drying.

After harvesting, the seeds are cleaned, sorted, and planted in nutrient-rich nursery beds under carefully controlled conditions. During the nursery stage, young seedlings receive regular watering, adequate shade, and continuous monitoring to protect them from pests and diseases. After approximately 6 to 12 months, when the seedlings have developed a strong root system and healthy leaves, they are ready for transplantation.

Processing Time by Method

Natural Process: 14–30 days
The coffee cherries are dried whole, making this the longest processing method.

Full Washed Process: 7–14 days
The outer skin and pulp are removed before drying, allowing the beans to dry faster.

Semi-Washed / Wet-Hulled Process: 5–7 days
This traditional Indonesian method, commonly used in Sumatra, significantly reduces drying time by removing the parchment while the beans still have a relatively high moisture content.

Before planting, the land is carefully prepared to ensure proper drainage and soil fertility. Seedlings are planted with adequate spacing to promote healthy growth, optimal sunlight exposure, and efficient nutrient absorption. Throughout the growing cycle, farmers perform routine maintenance, including fertilization, pruning, weed control, and pest management to maintain healthy plantations.

Processing Steps

1. Initial Sorting
Fresh coffee cherries are placed in water to separate good-quality cherries from inferior ones. Mature and dense cherries sink, while empty or damaged cherries float and are removed.

2. Pulping
For Washed and Semi-Washed processes, the selected cherries are passed through a pulping machine to remove the outer skin and pulp. The beans remain covered with parchment and a layer of natural mucilage. This step is skipped in the Natural Process. Farmers continuously monitor the health of the coffee trees and apply sustainable cultivation practices to minimize the impact of pests and diseases. Proper care throughout the growing season contributes to consistent yields and superior bean quality.

3. Fermentation and Washing
For Washed and Semi-Washed processes, the mucilage-covered beans are fermented for approximately 12–36 hours. After fermentation, the beans are thoroughly washed with clean water to remove the remaining mucilage.

4. Drying
The coffee is dried under the sun on concrete drying floors, tarpaulins, or raised drying beds.

  • Natural Process: Whole cherries are dried for approximately 14–30 days until the moisture content reaches around 11–12%.
  • Washed Process: Parchment coffee is dried for approximately 7–14 days until the moisture content reaches 11–12%.
  • Semi-Washed Process: Parchment coffee is initially dried for about 1–2 days until the moisture content decreases to approximately 30–35%.

5. Hulling
For Natural and Washed coffee, hulling is performed after the beans are fully dried to remove the parchment and produce green coffee beans. In the Semi-Washed process, hulling is performed while the beans still have a moisture content of approximately 30–35%.

6. Final Drying
For the Semi-Washed process, the parchment is removed while the beans are still moist. The resulting green beans are then dried again for approximately 2–3 days until they reach the desired moisture content of 11–12%, making them ready for storage, sale, and export.
